Hello. Good-Midwestern-Boy here. What they made was not gravy, it was bechamel sauce. I'll bet a hundred bucks that grandma did not "discard the oil" then add butter. Make her proud and "keep the oil" (with all those wondrous brown and black flecks and flavor) and add the flour to that.
I would have kept a few tablespoons oil, the fond and added a cube of butter. I know it as peppered milk gravy and it's so good, especially over mashed potatoes.

My boyfriend had a chicken fried steak from Texas Roadhouse and had a terrible experience, so I decided to make them because I bet myself that I could make them better. Used this recipe and he devoured the whole thing and it melted my heart to see him lit up with every bite he took.

My tastebuds had to adjust but once I tasted the miracle that is a medium rare steak seasoned with salt and pepper....i was converted. Mom, Dad...I have something to tell you...I...I also like white people's way of seasoning "Son....we knew, we have always known...It's ok but know that your salt and pepper medium steak is not welcome at family gatherings. Think about your grandparents.😜
You want a really good chicken fried steak use a pork tenderloin and pound it down finish the same way.Sometimes I also use club crackers munched down to look like bread crumbs.That is the absolute best.Yum.

You know, you could save a step and use a stick of butter instead of canola oil to fry the steaks, then add the flour to the butter/meat drippings for better tasting gravy. You might need to add a little more butter, but it'll taste so much better!
What is the thing on the side in the final plated up meal at the end that looks like a bun? I noticed that a lot of American roast style meals have that with their meals but I could never work out what it is. I am assuming a bread role or Yorkshire pudding?
